Mehdi’s research profile and expertise is on alternative proteins, their chemistry and functionality. Texturizing alternative proteins using extrusion and 3D printing and its relationship with protein structure is a main focus.

Food packaging is another research area which he is actively working on with focus on biobased and active packaging materials.
